I have recently been incorporating shredded coconut into my diet in delicious ways.
I have discovered that vanilla yogurt + shredded coconut = perfection. Plus it looks like snow.
This morning I made pancakes and with my improvised recipe discovered heaven on earth:
Flour, an egg, red wine vinegar, baking soda (a fair amount), shredded coconut, raspberries, cinnamon (not too much), salt, half and half, water, and a dash of apple juice. Then I spread "Sweet Sadie's Butterscotch Caramel Sauce" on top.
These had to be the best pancakes I have ever tasted, and I've tasted quite a few.
